The increasing publicity of health concerns and trendy diets has changed the way people look at food. There is a demand for healthier options to some of our favorite baked goods and pastries and you must make sure you are able to serve what customers want. In this course, students will explore several specialty diets and practice creating delicious and exciting baked goods and pastries accommodating those diets.
Topics covered include diets such as gluten-free, lactose-free, paleo, vegan, raw, sugar-free, fat-free and Farm To Table®, as well as how to adapt recipes and replace ingredients to accommodate these diets. Additionally, students will examine common heart healthy diets and how today’s luxury spas have adapted their menus to accommodate them.
